Sweet and sour chicken casserole

Recipes for Sweet and Sour Chicken

In Chinese, sweet and sour chicken is known as 甜酸鸡 (pronounced tian2-suan1-ji1).

 

Baked sweet and sour chicken casserole recipe

Part A Ingredients
1lb (450g) of white chicken meat (eg. chicken breast), cut into cubes or strips
1/2 teaspoon salt
1 teaspoon pepper, white
2 cups flour
4 tablespoons of light vegetable oil (such as canola oil)

Part B Ingredients
2 onions, sliced into squares
2 green peppers, sliced into small squares
2 tomatos, diced
150g green peas (or a pea-carrot, or pea-carrot-corn kernel frozen vegatable mixture)

Part C Sauce Ingredients
1/2 cup of water
1 cup pineapple juice
2 tablespoons Chinese Shao Hsing wine or dry sherry (optional)
4 tablespoons tomate paste or tomato ketchup
8 tablespoons of vinegar
1 tablespoon soy sauce

1 can of pineapple chunks (or pineapple rings cut into squares)

An oven preheated to 350°F (180°C)

Cooking Directions

(Part A) Prepare the chicken cubes
1. Marinate the chicken cubes with the salt and pepper, and let rest for 30 minutes in the refrigerator (put it in a bowl and cover with cling wrap).
2. Coat the chicken cubes with flour.
3. Heat the pan over medium-high heat and add the oil.
4. Fry the chicken cubes until golden brown.
5. Remove from pan and place into a casserole dish.

(Part B) Prepare the casserole ingredients
6. Into the same pan, add the onions and stir-fry for about 2 minutes or until the onions are semi-transparent (don't over cook it because they are going into the oven later).
7. Remove from heat and put into the casserole dish.
8. Add the green peppers, peas and tomatos into the casserole dish.

(Part C) Prepare the casserole sauce
9. Mix the water, pineapple juice, tomate paste or ketchup, vinegar and soy sauce (and dry sherry if desired).
10. Pour into the casserole dish.

(Part D) Bake the casserole and serve
11. Bake in the oven for about 15-20 minutes at 350°F (180°C). If you have a fan-assisted oven, you will probably need to shorten the cooking time to about 10-15 minutes.
12. Just before serving, add pineapple chunks into the dish and mix.

Cornstarch is a fine powder made by grinding a part of the corn kernal known as the endosperm. It is used in many recipes because it can thicken sauces without imparting a flour-like taste. In general, flour shouldn't be used in place of cornstarch because it alters the flavor of a sauce. It can be found at most asian grocers such as Chinese Food DIY (US) or this one (UK).

 

How to use Cornstarch

It is important that you do not add cornstarch powder directly into the sauces you are preparing in a pan. Always add cornstarch powder to cold water separately, mix it throughly into a slurry, then add it into the sauce being prepared. This way, the cornstarch powder won't clump up into little lumps.

Once cornstarch has been added to your sauce, cook your sauce for at least a minute for the cornstarch to thicken. But don't cook it for too long, or the cornstarch will start to break down and the sauce will come out funny.
